By K. Ruby Blume

Review & Description

A comprehensive and inspiring guide to self-reliance, sustainability, and green living for city dwellers.

The urban homesteading movement is spreading rapidly across the nation. Urban Homesteading is the perfect “back-to-the- land” guide for urbanites who want to reduce their impact on the environment. Full of practical information, as well as inspiring stories from people already living the urban homesteading life, this colorful guide gives a clear understanding of the lifestyle to any reader. It embraces the core concepts of localization (providing our basic needs close to where we live), self-reliance (re-learning that food comes from the ground, not the grocery store), and sustainability (giving back at least as much as we take). Readers will find concise how-to information that they can immediately set into practice, from making solar cookers to growing tomatoes in a pot to raising chickens on a tiny plot to maintaining the mental serenity of country life in the fast-paced city environment. A big, ripe cornucopia of a book by gardeners who cook and cooks who garden, Smith & HawkenThe Gardeners' Community Cookbook celebrates both the Smith & Hawken gardening community and Second Harvest, the largest charitable hunger relief organization in the United States. Over 300 contributors from all 50 states share the fruit and vegetables of their labors--the secrets of their tomatoes and their tomato sauce. There are herb growers. Patio gardeners. Farmers. And famous chef/gardeners and writers, such as Deborah Madison, Alice Waters, Barbara Kafka, Ken Hom, Paula Wolfert, Thomas Keller, and Barbara Damrosch, who forces Belgian endive in buckets under the kitchen sink during bitter Maine winters.

And what they offer are over 400 recipes that give a cross section of creative American garden cooking. Here are garden-to-table dishes: Spinach and Strawberry Salad; Mexican Bruschetta. Seasonal inspirations: Curried Zucchini Soup; Tortellini with Pumpkin Alfredo; Asparagus Mushroom Flan. Prime pickings: Chicken and Chives; New Mexico Chard Enchiladas. Review & Description

Charcuterie—a culinary specialty that originally referred to the creation of pork products such as salami, sausages, and prosciutto—is true food craftsmanship, the art of turning preserved food into items of beauty and taste. Today the term encompasses a vast range of preparations, most of which involve salting, cooking, smoking, and drying. In addition to providing classic recipes for sausages, terrines, and pâtés, Michael Ruhlman and Brian Polcyn expand the definition to include anything preserved or prepared ahead such as Mediterranean olive and vegetable rillettes, duck confit, and pickles and sauerkraut. Ruhlman, coauthor of The French Laundry Cookbook, and Polcyn, an expert charcuterie instructor at Schoolcraft College in Livonia, Michigan, present 125 recipes that are both intriguing to professionals and accessible to home cooks, including salted, airdried ham; Maryland crab, scallop, and saffron terrine; Da Bomb breakfast sausage; mortadella and soppressata; and even spicy smoked almonds. 50 line drawings

We Sure Can!: How Jams and Pickles Are Reviving the Lure and Lore of Local Food (Paperback)

We Sure Can!: How Jams and Pickles Are Reviving the Lure and Lore of Local Food
We Sure Can!: How Jams and Pickles Are Reviving the Lure and Lore of Local Food (Paperback)
By Sarah B. Hood

Review & Description

We Sure Can! celebrates the ongoing "Canvolution," in which urban "preservationists," local-food aficionados, rural picklers and jammers, and food bloggers are rediscovering the lost art of home canning jams, pickles, and other preserves. And we're not talking your standard strawberry jam here; passionate canners are preserving all manner of fruits and vegetables and combining them with unexpectedly exotic spices and ingredients.

The book features over one hundred recipes from an international assembly of inventive canners (including the author herself), as well as profiles of those who do it best. The book's recipes are divided according to the seasons; some of the more tantalizing creations include Lemongrass, Ginger, & Kaffir Lime Jelly; Blackberry Lime Jam; Dandelion Jelly; Pickled Ramps; Lavender Peach Preserves; and Pickled Watermelon Rinds. The book also features practical and important information and safety tips for those wanting to start canning produce at home.

Perfect for fans of the growing locavore movement and those who are empowered by the idea of "putting up" their own preserves, this book will inspire readers to start their own jam sessions as soon as the year's bumper crop of fruits and vegetables becomes available. Can anybody join the movement? We sure can!

Sarah B. Hood is a freelance food writer who has been canning for more than a decade. Her preserves have won prizes from Canada's Royal Agricultural Winter Fair and the Culinary Historians of Canada. She lives in Toronto, Ontario. Read more

FoodSaver T03-0006-01 Regular-Mouth Jar Sealer (Kitchen)

Review & Description

FoodSaver Regular jar sealer allows vacuum packaging in Ball or Kerr Mason jars. Ideal for liquids and fragile foods, or for storage of dry goods such as brown sugar, spices, dried fruit, coconut and flourFor those who cook large quantities of food for storage, FoodSaver vacuum packaging systems offer excellent protection against food spoilage and freezer burn. This jar sealer attachment fits on pint- and quart-sized Mason jars and is for use with any FoodSaver machine that has an accessory port. The lid forms a tight seal on Mason jars while tubing (sold separately) inserts through the top and removes air from the jar with the help of a FoodSaver machine. The jar sealer works equally as well in packaging liquid foods, such as jams, sauces, or mustard, as it does for dry goods, such as brown sugar or spices. The sealer can even re-seal the same container multiple times (in case someone keeps dipping into the stored jars of raspberry jam). Vacuum packaging with this lid can keep food fresh three to five times longer than keeping it in a plastic food storage container in the refrigerator; however, it is a different process from canning and should not be confused with traditional canning methods. --Cristina Vaamonde Read more

Featured Recipe: Sweet Pepper and Corn Relish
Makes: About 6 cups (3 pints)

Time commitment: About 1 day

Ingredients
1 tablespoon vegetable oil
3 3/4 cups diced red bell pepper (3 or 4 peppers)
1 tablespoon kosher salt
4 cups fresh or thawed frozen corn kernels
1 3/4 cups diced red onion (1 very large onion)
1 1/2 cups apple cider vinegar
1 1/2 cups sugar
1/2 teaspoon ground turmeric

Instructions
Heat the oil in a large skillet over medium-high heat. Add the peppers and salt and sauté for approximately 12 minutes, stirring often, until the peppers soften and begin to caramelize. Add the corn, stirring to combine, and cook the vegetables for 3 to 4 minutes longer, until the corn is hot. Turn off the heat and add the onion to the pan; stir well.

In a small saucepan over medium heat, combine the vinegar, sugar, and turmeric and stir just until the sugar dissolves, about 2 minutes. Pack the vegetables tightly into 3 clean pint jars, and pour the warm brine over the vegetables to cover completely, discarding any unused brine. To can the relish for longer storage, process the jars according to the instructions on page 28. Otherwise, cover tightly, and let the relish sit at room temperature for 1 day before moving it to the refrigerator.

How to Store It
Refrigerated, this will keep for up to 6 months. Canned, it will keep for up to 1 year.

Review & Description

A reflection of women's tolerance observed over time by a curious little girl. In addition, how some Italian immigrant women survived grueling day-to-day toiling in produce factories and canning at home, during the 1940’s. This is a short story of acquaintances and relatives, who because of the same mindset, held their strong family traditions together in a small factory town. (approx. 1500 words).

Carol Aitken is a Teacher in Western New York, who enjoys writing short stories from her observations over the years.
